Description

Soft, fluffy cinnamon rolls with a rich banana bread twist, filled with gooey cinnamon sugar and topped with creamy icing. Perfect for breakfast or dessert.


Ingredients

  • 1 cup mashed ripe bananas (about 2 large bananas)
  • 2 3/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 tsp active dry yeast
  • 1/4 cup unsalted butter, melted
  • 1/2 cup warm milk
  • 1/2 tsp salt
  • 1 large egg
  • 1/2 cup brown sugar, packed
  • 2 tsp ground cinnamon
  • 2 tbsp unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for icing)
  • 23 tbsp milk (for icing)

Instructions

1. In a bowl, whisk together warm milk, yeast, and a pinch of sugar. Let sit until foamy, about 5 minutes.

2. Add mashed bananas, melted butter, egg, granulated sugar, and salt to the yeast mixture. Stir to combine.

3. Mix in flour gradually until a smooth dough forms. Knead for 5 minutes, then cover and let rise until doubled, about 1 hour.

4. Roll dough into a rectangle. Spread softened butter on top, sprinkle with brown sugar and cinnamon. Roll up tightly and slice into 9 rolls.

5. Place rolls in a greased baking dish. Cover and let rise for 20 minutes.

6. Bake at 350°F (175°C) for 25 minutes or until golden.

7. Whisk together powdered sugar and milk for icing. Drizzle over warm rolls before serving.


Notes

For best flavor, use very ripe bananas with plenty of brown spots.

Let the dough rise in a warm area to ensure soft and fluffy rolls.

If the icing is too thick, add a little more milk; if too thin, add more powdered sugar.
