Description

Grilled Peach and Chicken Salad is a fresh summer dish combining smoky grilled chicken, caramelized peaches, crisp greens, and tangy cheese, all tossed with a light balsamic vinaigrette for a perfect balance of sweet and savory flavors.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 ripe peaches, halved and pitted
  • 6 cups mixed greens (arugula, spinach, or spring mix)
  • 1/4 cup goat cheese or feta, crumbled
  • 1/4 cup balsamic vinaigrette
  • 1 tablespoon olive oil, for grilling
  • Salt, to taste
  • Black pepper, to taste

Instructions

1. Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper and brush lightly with olive oil.

2. Grill the chicken for 6–7 minutes per side, or until fully cooked and the internal temperature reaches 165°F. Remove from the grill and let rest before slicing.

3. Place the peach halves cut-side down on the grill and cook for 3–4 minutes until lightly charred and softened.

4. Slice the grilled peaches and the rested chicken breasts.

5. In a large bowl, combine the mixed greens, sliced chicken, grilled peaches, and crumbled goat cheese or feta.

6. Drizzle with balsamic vinaigrette and gently toss to combine. Serve immediately.


Notes

For extra crunch, add a handful of toasted walnuts, pecans, or sliced almonds.

If you do not have a grill, you can cook the chicken in a grill pan or skillet and sear the peaches the same way.

A drizzle of honey or a squeeze of fresh lemon can brighten the flavor of the vinaigrette.
