Description
A creamy, refreshing cucumber pasta salad with dill, sour cream, and mayonnaise dressing. This easy chilled salad is perfect for warm days, picnics, or as a light side dish.
Ingredients
- 8 oz penne pasta
- 1/2 white onion, finely minced
- 1 English cucumber, diced into 1/4-inch pieces
- 1/2 cup mayonnaise
- 1/2 cup sour cream (full-fat recommended)
- 2 tbsp vinegar
- 2 tbsp fresh dill, finely chopped
- 1 tsp sugar
- 1/2 tsp salt
- Black pepper, to taste
Instructions
1. In a small bowl, combine mayonnaise, sour cream, vinegar, sugar, chopped dill, salt, and black pepper, mixing until smooth. Set aside to let the flavors meld.
2. Thinly slice the onion and place the slices in a bowl of cold water to mellow the sharp onion flavor. Let sit while preparing other ingredients.
3. Cook the penne pasta according to the package directions until al dente.
4. Drain the pasta and rinse under cold water to stop the cooking process and cool it completely.
5. Cut the cucumber in half lengthwise and use a spoon to remove the seeds.
6. Slice or dice the cucumber into small bite-size pieces.
7. Drain the onions and add them to a large bowl along with the cooled pasta and cucumber.
8. Pour the prepared dressing over the salad and toss well until everything is evenly coated.
9. Cover and refrigerate the salad for at least 40 minutes before serving to allow the flavors to blend.
Notes
Soaking the onion in cold water helps reduce its sharpness while keeping its crunch.
Allowing the salad to chill before serving greatly improves the flavor and texture.
Full-fat sour cream and mayonnaise provide the creamiest dressing.
Fresh dill gives the best flavor, but dried dill can be used in a pinch.
