Description

Ingredients

  • 1 tablespoon dried culinary lavender
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream (optional)
  • Granulated sugar for rolling (optional)

Instructions

1. In a medium bowl, whisk together the flour, dried lavender, baking powder, baking soda, and salt.

2. In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy.

3. Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture and beat until combined.

4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms. Add heavy cream if needed to soften the dough.

5. Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.

6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

7. Scoop tablespoon-sized portions of dough and roll into balls. Roll in granulated sugar if desired.

8. Place dough balls on the prepared baking sheet about 2 inches apart.

9. Bake for 10–12 minutes until the edges are lightly golden and centers remain slightly soft.

10. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.


Notes

Use culinary lavender only, as decorative lavender may be treated with chemicals.

Fresh lemon zest gives the cookies a bright citrus aroma and stronger lemon flavor.

If the dough feels stiff, add heavy cream one tablespoon at a time until it becomes soft and workable.

Rolling the dough in sugar before baking adds a light crunch to the cookie exterior.
