Description

Crispy Cajun-seasoned fries loaded with creamy cheddar cheese sauce and a tangy, spicy voodoo sauce, topped with fresh herbs and optional toppings for a bold Louisiana-inspired snack.


Ingredients

  • 500g frozen or fresh-cut fries (thick-cut or crinkle-cut preferred)
  • 2 tbsp olive oil (if baking fresh fries)
  • 1 tbsp Cajun seasoning
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • Pinch of salt
  • 1 tbsp butter or plant-based butter
  • 1 tbsp all-purpose flour
  • 200ml milk (dairy or plant-based)
  • 100g shredded cheddar cheese
  • ¼ tsp Cajun seasoning (for cheese sauce)
  • Pinch of salt and black pepper
  • 4 tbsp mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp hot sauce
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • 1 tsp vinegar or lemon juice
  • 1 tsp sugar or honey
  • Sliced jalapenos (optional)
  • Diced red onions (optional)
  • Chopped scallions (optional)
  • Fresh chopped parsley or coriander (optional)
  • Crumbled cheese or dairy-free cheese (optional)
  • Sliced olives (optional)
  • Optional protein toppings such as sautéed mushrooms, grilled chicken, or spiced chickpeas

Instructions

1. If using fresh potatoes, cut them into thick fries and soak in cold water for 30 minutes to remove excess starch.

2. Drain and pat the fries dry, then toss with olive oil, Cajun seasoning, garlic powder, smoked paprika, black pepper, and salt.

3. Bake at 220°C for 25–30 minutes or air fry until golden and crispy. If using frozen fries, cook according to package directions and toss with Cajun seasoning after baking.

4. To make the cheese sauce, melt butter in a saucepan over medium heat and whisk in flour to create a roux.

5. Cook the roux for 1–2 minutes, then slowly whisk in the milk until smooth.

6. Stir continuously until the sauce thickens, then add shredded cheddar cheese, Cajun seasoning, salt, and pepper. Stir until melted and creamy.

7. In a bowl, whisk together mayonnaise, ketchup, Dijon mustard, hot sauce, garlic powder, smoked paprika, vinegar or lemon juice, and sugar until smooth to make the voodoo sauce.

8. Place the hot fries on a serving tray or plate.

9. Drizzle generously with the warm cheese sauce.

10. Add toppings such as jalapenos, diced onions, scallions, herbs, olives, or additional cheese.

11. Finish by drizzling the voodoo sauce over the fries and serve immediately while hot and crispy.


Notes

For extra crispiness, double bake the fries or finish them in an air fryer.

Adjust the hot sauce in the voodoo sauce to control the heat level.

For a vegetarian version, keep toppings plant-based; for a heartier dish add grilled chicken or spiced chickpeas.

Serve immediately to keep the fries crispy and the sauces warm.
