Description

A bright and refreshing twist on classic tiramisu featuring layers of lemon syrup–soaked ladyfingers, silky lemon curd, and creamy mascarpone filling.


Ingredients

  • Lemon Syrup:
  • ¾ cup freshly squeezed lemon juice
  • ¾ cup water
  • 1 ¼ cup granulated sugar
  • 3 tablespoons lemon zest
  • Lemon Curd:
  • 7 egg yolks
  • 1 whole egg
  • 1 cup granulated sugar
  • ½ cup lemon juice
  • 3 tablespoons lemon zest
  • ⅛ teaspoon salt
  • 5 tablespoons unsalted butter, cut into half-inch pieces
  • Mascarpone Filling:
  • 1 ⅓ cup heavy cream
  • 16 ounces mascarpone cheese
  • ¾ cup granulated sugar
  • ½ cup lemon syrup (from recipe above)
  • 1 teaspoon vanilla extract
  • For Assembly:
  • 1 (7 oz) package savoiardi ladyfingers (about 24)

Instructions

1. Prepare the lemon syrup by combining lemon juice, water, sugar, and lemon zest in a saucepan and simmering until the sugar dissolves; let cool.

2. Make the lemon curd by whisking egg yolks, whole egg, sugar, lemon juice, lemon zest, and salt over gentle heat until thickened, then stir in butter until smooth and chill.

3. In a bowl, whip the heavy cream until soft peaks form.

4. In another bowl, blend mascarpone cheese with sugar, lemon curd, lemon syrup, and vanilla until smooth.

5. Fold the whipped cream gently into the mascarpone mixture until fully combined.

6. Quickly dip each ladyfinger into the cooled lemon syrup and arrange a layer in a serving dish.

7. Spread half of the mascarpone filling evenly over the ladyfingers.

8. Add another layer of dipped ladyfingers followed by the remaining mascarpone filling.

9. Cover and refrigerate for at least 4 hours before serving to allow the layers to set.


Notes

Dip ladyfingers quickly so they absorb flavor without becoming soggy.

Chill overnight for the best texture and flavor.

Garnish with extra lemon zest or thin lemon slices before serving for a fresh presentation.
