Description

Spicy crab poke bowls made with sushi rice and a creamy Bang Bang sauce crab salad, topped with fresh vegetables and optional spicy poke sauce.


Ingredients

  • 1 cup sushi rice or Arborio rice
  • 2 tablespoons rice vinegar
  • 1 teaspoon granulated sugar
  • 1 pound imitation crabmeat, flaked, shredded or chopped
  • 6 tablespoons Bang Bang Sauce
  • Cucumbers, sliced
  • Carrots, shredded
  • Edamame
  • Avocado, sliced
  • Green onions, sliced
  • Spinach
  • Everything Bagel Seasoning (optional)
  • Spicy Poke Sauce (optional)

Instructions

1. Prepare sushi rice or Arborio rice according to package directions in a medium saucepan.

2. When rice is finished cooking, remove from heat and stir in rice vinegar and sugar with a fork. Let cool to warm or room temperature.

3. In a medium bowl, combine imitation crabmeat with Bang Bang Sauce and toss until evenly coated.

4. Divide the cooled rice among four serving bowls.

5. Top each bowl with the spicy crab mixture.

6. Add desired toppings such as cucumbers, carrots, edamame, avocado, green onions, or spinach.

7. Drizzle with Spicy Poke Sauce if desired and sprinkle with Everything Bagel Seasoning before serving.


Notes

Spicy Poke Sauce: Whisk together 2 tablespoons ponzu sauce or soy sauce with 1 tablespoon Bang Bang Sauce and drizzle over the bowls.

Sushi rice gives the most authentic flavor, but Arborio rice works as a good substitute.
