Description

A light and fresh spring mix salad with juicy strawberries, crunchy nuts, and creamy goat cheese tossed in a sweet and tangy balsamic honey dressing—perfect for spring meals, brunch, or Easter gatherings.

Ingredients

Scale
  • 6 cups spring mix greens (baby spinach, arugula, and baby lettuces)
  • ½ cup strawberries, sliced
  • ¼ cup crumbled goat cheese (or feta)
  • ¼ cup candied pecans or walnuts
  • ¼ small red onion, thinly sliced
  • ¼ cup sunflower seeds (optional)
  • ¼ cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 small garlic clove, minced
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

1. In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper until smooth and well combined. Set aside.

2. In a large bowl, add the spring mix greens, sliced strawberries, thinly sliced red onion, crumbled goat cheese, and candied pecans.

3. Gently toss the salad ingredients together until evenly mixed.

4. Drizzle the balsamic honey dressing over the salad and toss lightly to coat the greens.

5. Sprinkle sunflower seeds on top if using and serve immediately for the freshest flavor.

Notes

For extra flavor, lightly toast the pecans or walnuts before adding them to the salad.

You can substitute feta cheese for goat cheese if preferred.

Add grilled chicken for a heartier meal.

Dress the salad just before serving to keep the greens crisp.
