1 large sweet Vidalia onion, finely diced
3 stalks celery, diced small
4 cloves garlic, minced

15-ounce can fire-roasted tomatoes, undrained
12 ounces artichoke hearts, quartered
15-ounce can garbanzo beans, rinsed and drained
6 cups low-sodium chicken broth
1 tablespoon fresh lemon juice
1/4 cup fresh parsley, chopped

Instructions

Heat the olive oil in a large pot or Dutch oven over medium-high heat.
Add the diced onion and celery to the pot and sauté for 5 minutes until softened.
Stir in the minced garlic and cook for another minute until fragrant.
