Ingredients
1 lb lean ground beef
4 cloves garlic, minced
64 oz beef broth
30 oz petite diced tomatoes
1 tsp dried oregano
1 tsp kosher salt
8 oz bowtie pasta
2 cups fresh baby spinach
Instructions
Brown the ground beef in a large Dutch oven or stockpot over medium-high heat until fully cooked.
Add the minced garlic and sauté for 1 minute until fragrant.
Pour in the beef broth, petite diced tomatoes with their juices, and the dried oregano.
Bring the liquid to a boil and stir in the salt.
Add the bowtie pasta and reduce the heat to a simmer.
Cook for 10-12 minutes or until the pasta is tender.
Stir in the fresh baby spinach and cook for 1-2 minutes until wilted.
Serve hot in bowls.
Notes
You can add other vegetables like carrots or zucchini to increase the nutrient content. Leftovers store well in the refrigerator for up to 3 days, but note that the pasta will continue to absorb broth; add a splash of water or extra broth when reheating.
