Ingredients

2 tablespoons olive oil, divided
1.25 pounds boneless skinless chicken breasts, thinly sliced
Salt and black pepper to taste
2 apples, cored and cut into 1/2 inch wedges
1 cup shallots, sliced
1 cup apple cider
1/2 cup chicken broth
1 tablespoon Dijon mustard
1/4 cup heavy cream
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves


Instructions

Season the chicken slices liberally with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Sear the chicken in batches until golden brown and cooked through, then remove from the pan and set aside.
Add the remaining tablespoon of oil to the same skillet and sauté the apple wedges until slightly caramelized and crisp-tender, then remove.
Add the shallots to the skillet and cook until softened, about 2-3 minutes.
Deglaze the pan with apple cider, scraping up any browned bits from the bottom.
Stir in the chicken broth and Dijon mustard, bringing the mixture to a simmer until reduced by half.
Whisk in the heavy cream and return the chicken and apples to the pan.
Sprinkle with fresh rosemary and thyme, tossing gently to coat in the sauce until heated through.


Notes

Use Honeycrisp or Fuji apples for the best balance of sweetness and texture. Serve alongside mashed potatoes or crusty bread to capture the leftover sauce. This dish is best enjoyed immediately but can be stored in an airtight container for up to 3 days.
