4 teaspoons extra-virgin olive oil
1.5 pounds boneless skinless chicken thighs
1 teaspoon kosher salt
0.5 teaspoon freshly ground black pepper
1 cup apple cider (non-alcoholic)
1 tablespoon Dijon mustard
2 apples, sliced
1 sprig fresh rosemary


Instructions

Season the chicken thighs with half of the salt and pepper.
Heat 2 teaspoons of olive oil in a large skillet over medium-high heat.
Add the chicken to the pan and sear until golden brown on both sides, about 5-6 minutes per side, then remove from the pan.
Add the remaining olive oil to the same skillet and sauté the apple slices until slightly softened.

Return the chicken to the pan, add the rosemary sprig, and simmer for 8-10 minutes until the sauce reduces and coats the chicken.
Remove the rosemary sprig and serve the chicken topped with the caramelized apples and pan sauce.
