Description
Juicy grilled chicken breasts marinated in a bright lemon-garlic mixture, perfect for summer meals, salads, or meal prep.
Ingredients
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/4 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 boneless, skinless chicken breasts (about 2 pounds)
Instructions
1. Combine olive oil, lemon juice, garlic, oregano, chili powder, salt, and pepper in a small bowl and whisk well.
2. Place chicken breasts in a zip-top bag and pound to an even 1/2-inch thickness.
3. Pour marinade over chicken, seal bag, and refrigerate for 30 minutes to 2 hours.
4. Preheat and oil grill to medium-high heat (375–450°F).
5. Remove chicken from marinade and discard excess marinade.
6. Grill chicken for 5–8 minutes per side until internal temperature reaches 165°F.
7. Let chicken rest for 5 minutes before serving.
Notes
Serve immediately or store for later use in salads, sandwiches, or pasta dishes.
Cooked chicken keeps well in the refrigerator for up to 3 days.
For best results, start cooking over higher heat for grill marks, then finish over lower heat.
