Description

This refreshing and hearty BLT pasta salad reinvents a classic sandwich into a crowd-pleasing summer staple. Featuring tender rotini pasta, crispy turkey bacon, juicy tomatoes, and creamy avocado, it is tossed in a tangier, lighter dressing made from Greek yogurt and fresh herbs. It is the perfect balance of crunchy, creamy, and savory, designed to be a quick, budget-friendly meal that satisfies everyone at the dinner table without requiring hours of kitchen time.

Ingredients

Scale

16 oz rotini pasta
8 slices turkey bacon, cooked and chopped
2 cups cherry tomatoes, halved
1 head romaine lettuce, chopped
1 ripe avocado, diced
3/4 cup plain Greek yogurt
1/4 cup mayonnaise
2 tablespoons fresh lemon juice
1 teaspoon garlic powder
2 tablespoons fresh chives, minced
Salt and black pepper to taste

Instructions

Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente.
Drain the pasta and rinse under cold water to cool.
In a small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, garlic powder, and chives until smooth.
In a large mixing bowl, combine the cooled pasta, turkey bacon, cherry tomatoes, and avocado.
Pour the dressing over the pasta mixture and toss gently to coat evenly.
Fold in the chopped romaine lettuce just before serving to ensure the best crunch.
Season to taste with salt and black pepper.

Notes

Add the lettuce right before serving to keep it crisp. If preparing in advance, store the dressing and pasta components separately and assemble before your meal. You can also add diced cucumber for extra freshness.
