This Blueberry Cheesecake Stuffed French Toast is the ultimate indulgent breakfast or brunch dish. Thick brioche slices are filled with creamy cheesecake and blueberries, dipped in cinnamon custard, and pan-fried until golden. Finished with maple syrup and extra berries, it’s a simple but impressive homemade brunch favorite.
Ingredients
- 150g (5.3 oz) cream cheese, softened
- 2 tablespoons caster sugar
- 1 teaspoon vanilla extract
- 1/2 cup blueberries (fresh or thawed if frozen)
- 1 loaf day-old brioche, sliced thick (8 slices)
- 1 egg
- 1/2 cup milk
- 1/2 cup cream
- 1 teaspoon cinnamon
- Butter, for frying
- Extra blueberries, for topping
- Icing sugar, for dusting
- Maple syrup, for drizzling
Instructions
1. In a bowl, combine softened cream cheese, caster sugar, and vanilla extract until smooth.
2. Gently fold in the blueberries and mix until evenly combined.
3. Slice the brioche into thick 1.5-inch slices and cut a deep pocket into the center of each slice, or prepare pairs of slices for sandwich-style stuffing.
4. Fill each slice with 1–2 tablespoons of the cheesecake blueberry mixture and gently press to seal if using two slices.
5. In a shallow dish, whisk together the egg, milk, cream, and cinnamon to make the custard mixture.
6. Heat a large skillet over medium heat and melt a small knob of butter.
7. Dip each stuffed brioche slice into the custard mixture, coating both sides evenly.
8. Place the slices in the skillet and cook for 3–4 minutes per side until golden brown and crisp.
9. Transfer to a serving plate and dust with icing sugar.
10. Top with extra blueberries and drizzle generously with maple syrup before serving warm.
Notes
Stuffed brioche slices can be prepared ahead of time and refrigerated overnight before dipping in custard.
If using frozen blueberries, thaw and drain them well to prevent excess moisture in the filling.
Day-old brioche works best for texture, but fresh bread can be lightly toasted before stuffing.
Add lemon zest to the filling for extra freshness or substitute strawberries or raspberries for variation.
