Description

This comforting butternut squash and sausage soup is the ultimate one-pot meal, perfect for crisp autumn days. It balances the natural sweetness of roasted-style butternut squash with the savory kick of Italian-style turkey or chicken sausage. Enhanced with creamy white beans, fire-roasted tomatoes, and fresh spinach, this hearty soup is as nourishing as it is flavorful. It is a family-friendly, protein-packed dinner that comes together in just 30 minutes, making it an ideal choice for busy weeknights or stress-free meal prep.


Ingredients

3 tablespoons olive oil, divided
1 medium yellow onion, diced
1 pound Italian turkey or chicken sausage, casings removed
1 medium butternut squash, peeled, seeded, and cubed into 1/2-inch pieces
1 can (15 oz) white cannellini beans, rinsed and drained
1 can (14.5 oz) fire-roasted diced tomatoes
4 cups chicken or vegetable broth
3 cups fresh baby spinach
1 teaspoon dried oregano
Salt and black pepper to taste


Instructions

Heat 1 tablespoon of olive oil in a large pot over medium-high heat.
Add the turkey or chicken sausage and cook, breaking it into crumbles, until browned and cooked through. Remove and set aside.
Add the remaining 2 tablespoons of oil to the same pot, then stir in the diced onion and cook until translucent.
Add the butternut squash cubes and cook for 5-7 minutes until slightly softened.
Pour in the broth, fire-roasted tomatoes, and cooked sausage, then bring the mixture to a boil.
Reduce heat to low and simmer for 15 minutes or until the squash is fork-tender.
Stir in the white beans and baby spinach, cooking for 2-3 minutes until the spinach is wilted.
Season with oregano, salt, and pepper to taste before serving.


Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. This soup also freezes beautifully for up to 3 months. For an extra creamy texture, you can mash a few pieces of the cooked squash against the side of the pot.
