1 (4-pound) butternut squash, peeled and cut into 1-inch pieces
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon dried sage
1/2 teaspoon paprika
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 pound turkey bacon, chopped
2 cups diced apples
1 cup shredded gouda cheese
2 cups fresh kale, chopped
1/2 cup panko breadcrumbs
1/4 cup chopped pecans
1 tablespoon maple syrup


Instructions

Preheat your oven to 400°F (200°C).
Toss the cubed butternut squash with olive oil, thyme, salt, sage, paprika, cinnamon, and nutmeg on a large baking sheet.
Roast the squash for 25-30 minutes until fork-tender.
While the squash roasts, cook the turkey bacon in a skillet until crispy, remove, and drain.
In a large bowl, combine the roasted squash, crispy turkey bacon, diced apples, kale, and gouda cheese.
Transfer the mixture to a greased casserole dish.
In a small bowl, mix the panko breadcrumbs, pecans, and maple syrup, then sprinkle over the casserole.
Bake at 375°F (190°C) for 15-20 minutes until the top is golden brown and the cheese is bubbly.


Notes

Ensure you roast the squash until just fork-tender so it maintains its shape during the second bake.
