Description

A light, refreshing carrot apple salad with a creamy yogurt dressing, perfect for a healthy side or quick meal.


Ingredients

  • 6 medium carrots, peeled and shredded
  • 1 large apple, grated or julienned
  • 1/2 cup diced celery (optional)
  • 3/4 cup plain yogurt (or Greek yogurt)
  • 1 tsp honey or maple syrup
  • 2 tbsp lemon juice
  • 1 tbsp chopped parsley
  • Salt and pepper to taste

Instructions

1. Prep the produce: Peel and shred the carrots and apple using a box grater or food processor. Dice the celery if using.

2. Mix the dressing: In a small bowl, whisk together the yogurt, honey, lemon juice, parsley, salt, and pepper.

3. Combine: In a large bowl, toss the shredded carrots and apple (and celery, if using). Pour the dressing over and mix until well coated.

4. Chill: Cover and refrigerate for at least 1 hour to allow flavors to blend and the salad to firm up.

5. Serve: Garnish with extra parsley or a sprinkle of seeds or nuts if desired.


Notes

Use Greek yogurt for a thicker, creamier texture.

Add raisins or chopped nuts for extra texture and sweetness.

Best served chilled after resting for at least an hour.

Can be made a day ahead and stored in the refrigerator.
