Ingredients
- 1 lb (455 g) pizza dough, rested at room temperature for 15–20 minutes
- 7 slices American cheese, halved
- 14 frozen mini meatballs, fully thawed
- ¼ cup (45 g) baking soda
- 5 cups (1.2 L) water
- 1 large egg, beaten
- Coarse sea salt, for topping
- Yellow mustard, for dipping (optional)
Instructions
1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Cut the pizza dough into 14 equal pieces and roll each into an 8-inch strip.
3. Place half a slice of cheese and one meatball on each strip, then wrap and seal into a ball.
4. Bring water to a boil, add baking soda carefully, and return to a gentle boil.
5. Boil the dough balls in batches for 20–30 seconds, then remove and drain.
6. Place on baking sheet, brush with beaten egg, and sprinkle with coarse salt.
7. Bake for 15–20 minutes until golden brown.
8. Serve warm with mustard if desired.
Notes
Ensure dough is fully sealed to prevent cheese from leaking.
Do not skip the baking soda bath—it creates the classic pretzel texture and flavor.
Work in small batches when boiling to avoid overcrowding.
Best served fresh and warm for optimal texture and flavor.
