Ingredients
2 cups rotisserie chicken, shredded
2 cups frozen mixed vegetables, thawed
1 can (10.5 ounce) cream of chicken soup
1 cup sour cream
1/2 cup milk
1/4 cup grated parmesan cheese
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon black pepper
1 pound frozen tater tots
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the shredded chicken, thawed vegetables, cream of chicken soup, sour cream, milk, parmesan, garlic powder, onion powder, salt, basil, and black pepper.
Stir in half of the shredded cheddar cheese until well combined.
Transfer the mixture into a greased 9×13 inch baking dish and spread it into an even layer.
Arrange the frozen tater tots in a single layer over the chicken mixture.
Bake for 30 minutes, or until the sauce is bubbling and the tots are golden brown.
Sprinkle the remaining shredded cheddar cheese over the top and bake for an additional 5 minutes until the cheese is melted.
Notes
Ensure mixed vegetables are fully thawed and patted dry to prevent a watery casserole. You can customize this by adding diced bell peppers or swapping the chicken for shredded turkey. Store leftovers in an airtight container for up to 3 days.
