Ingredients
3 tablespoons extra virgin olive oil
3 cloves garlic, minced finely
1 large yellow onion, finely diced
4 stalks celery, chopped into half-moons
4 large carrots, peeled and sliced into rounds
12 cups filtered water
1 whole chicken (5–6 lbs)
2 chicken bouillon cubes
2 bay leaves
4 tablespoons fresh parsley, chopped
12 oz egg noodles
Salt and black pepper to taste
Instructions
Heat olive oil in a large stockpot over medium heat.
Add onion, carrots, and celery; sauté until vegetables soften, about 8 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Place the whole chicken into the pot and cover with filtered water.
Add bouillon cubes and bay leaves.
Bring to a boil, then reduce to a gentle simmer for 2 hours, skimming any foam from the surface.
Remove the chicken carefully, shred the meat, and discard skin and bones.
Return shredded chicken to the pot.
Add the egg noodles and cook until tender, about 8-10 minutes.
Stir in fresh parsley, season with salt and pepper, and serve warm.
Notes
For best results, skim the fat from the surface of the broth periodically during simmering to maintain clarity. Store leftovers in an airtight container in the refrigerator for up to 4 days. If the soup thickens too much on storage, add a splash of water when reheating.
