1.5 lbs chicken breast, cut into bite-sized pieces
1 lb Brussels sprouts, trimmed and halved
1 cup butternut squash, peeled and cubed
3 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon fresh thyme leaves
1/2 teaspoon smoked paprika
Salt and black pepper to taste
1/4 cup low-sodium chicken broth (or water)


Instructions

Heat 2 tablespoons of olive oil in a large cast-iron skillet over medium-high heat.
Add the chicken pieces, season with salt, pepper, and paprika, and sear until golden and cooked through; remove chicken from the pan and set aside.
In the same skillet, add the remaining oil and place the Brussels sprouts cut-side down; cook undisturbed for 3-4 minutes to develop a nice char.
Add the butternut squash to the skillet and sauté for another 5-7 minutes until slightly softened.
Stir in the minced garlic and thyme, cooking for 1 minute until fragrant.
Return the cooked chicken to the skillet and pour in the broth to deglaze, scraping up any browned bits from the bottom.
Cook for another 2-3 minutes until the liquid has mostly evaporated and flavors are well combined; serve warm.


Notes

Ensure you leave the Brussels sprouts cut-side down without moving them initially to achieve a deep golden-brown sear. You can swap butternut squash for sweet potatoes if preferred. Store leftovers in an airtight container in the refrigerator for up to 3 days.
