Ingredients
3 tablespoons unsalted butter
1 large yellow onion, finely diced
8 ounces mushrooms, thinly sliced
2 cloves garlic, minced
3 cups cooked chicken, cubed
1 pound fresh green beans, blanched
1/2 cup heavy cream
1/2 cup chicken stock
1 cup smoked Gouda cheese, shredded
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup crispy fried onions
Instructions
Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
In a large skillet, melt the butter over medium heat and sauté the onions until soft.
Add the mushrooms to the skillet and cook until they release their moisture and turn golden.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the heavy cream, chicken stock, salt, and pepper; simmer until the sauce thickens slightly.
Remove from heat, stir in the shredded smoked Gouda until melted, then fold in the cubed chicken and blanched green beans.
Transfer the mixture to the prepared baking dish.
Top with the crispy fried onions and bake for 20-25 minutes until the sauce is bubbly and the topping is golden brown.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F to restore the crispness of the fried onions. You can use rotisserie chicken for extra convenience.
