A light yet satisfying Chicken Club Pasta Salad, perfect for summer feasts and adaptable to various preferences.
Ingredients
- 2 cups corkscrew-shaped pasta
- 1/2 cup Italian-style salad dressing
- 1/4 cup mayonnaise
- 2 cups chopped rotisserie chicken
- 4 slices crispy cooked bacon
- 1 cup cubed Muenster cheese
- 1 cup chopped celery
- 1 cup chopped green bell pepper
- 1 cup cherry tomatoes
- 1 avocado, chopped
Instructions
1. Boil corkscrew pasta in lightly salted water until al dente, about 8–10 minutes. Drain and rinse under cold water to stop cooking.
2. In a large mixing bowl, whisk together Italian dressing and mayonnaise until smooth.
3. Add cooled pasta, chicken, bacon, cheese, celery, bell pepper, tomatoes, and avocado to the bowl. Toss gently until evenly coated.
4. Cover and chill in the refrigerator for at least 30 minutes before serving.
Notes
Substitute Greek yogurt for mayonnaise for a lighter option.
Use leftover grilled chicken or turkey instead of rotisserie chicken if desired.
Swap vegetables like celery or bell peppers based on preference.
Add avocado just before serving to keep it fresh.
