Description
This Chicken Noodle Soup is the perfect comfort food with tender chicken, egg noodles, carrots, celery, and onion simmered in a flavorful broth. Quick, hearty, and ready in just 35 minutes.
Ingredients
- 1 tablespoon canola oil
- 2 large carrots, peeled and chopped
- 2 ribs celery, chopped
- 1/2 medium onion, finely diced
- 1 1/2 teaspoons salt
- 1 teaspoon minced garlic
- 1 teaspoon dried parsley
- 1/4 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1/4 teaspoon turmeric (optional)
- 6 cups low sodium chicken broth
- 2 boneless skinless chicken breasts (about 3/4 lb or 340 g)
- 2 cups dried egg noodles
- Salt and pepper, to taste
Instructions
1. Heat the canola oil in a 4-quart Dutch oven or soup pot over medium-high heat.
2. Add the carrots, celery, and onion. Cook, stirring occasionally, until the onion is translucent, about 3 to 4 minutes.
3. Stir in the salt, garlic, parsley, thyme, black pepper, and turmeric (if using). Cook for 1 minute.
4. Pour in the chicken broth, scraping the bottom of the pot to loosen any browned bits.
5. Add the chicken breasts and bring the soup back to a simmer. Reduce the heat to medium-low, cover, and cook for 10 minutes or until the chicken is cooked through. Remove the chicken and shred it.
6. Stir the egg noodles into the soup and simmer for about 10 minutes, or until al dente.
7. Return the shredded chicken to the pot, stir well, and season with additional salt and pepper to taste before serving.
Notes
Chicken breasts can be replaced with boneless, skinless chicken thighs or white beans for a meatless version.
Carrots, celery, and onion create the classic mirepoix base, but additional vegetables can be added if desired.
Egg noodles work best, but any short pasta may be substituted. For gluten-free pasta, cook it separately and add to individual bowls before serving.
