6 tablespoons butter, divided
2 pounds chicken breasts, cut into bite-size pieces
1 small yellow onion, diced
3 celery stalks, thinly sliced
4 large carrots, thinly sliced
3 garlic cloves, minced
6 tablespoons all-purpose flour
2 cups chicken broth
2 ½ cups milk
½ teaspoon ground thyme
â…› teaspoon ground nutmeg
1 cup frozen peas
1 bag (32 oz) frozen tater tots
1 cup shredded sharp cheddar cheese
Salt and black pepper to taste


Instructions

Preheat your oven to 400°F (200°C).
In a large skillet, melt 2 tablespoons of butter over medium-high heat and brown the chicken pieces until cooked through; remove and set aside.
In the same skillet, melt the remaining 4 tablespoons of butter, then add onion, celery, and carrots, cooking until softened.
Stir in minced garlic and cook for 1 minute until fragrant.
Sprinkle flour over the vegetables and stir constantly for 2 minutes to create a roux.
Gradually whisk in the chicken broth and milk, stirring until the sauce thickens and becomes creamy.
Season with thyme, nutmeg, salt, and pepper.
Stir the cooked chicken and frozen peas into the gravy, then transfer the mixture to a 9×13 inch baking dish.
Arrange the frozen tater tots in an even layer on top of the chicken mixture.
Bake for 25-30 minutes, or until the filling is bubbling.
Sprinkle the cheddar cheese over the top and bake for an additional 5 minutes until melted and golden.


Notes

Use leftover rotisserie chicken to save even more time. You can swap the cheddar cheese for mozzarella if preferred. Store leftovers in an airtight container for up to 3 days and reheat in the oven to maintain the crispiness of the tots.
