Description

Cookie Dough Cheesecake Bars combine a buttery graham cracker crust, creamy cheesecake filling, and a chocolate chip cookie dough topping for an irresistibly indulgent dessert.

Ingredients

Scale
  • Graham Cracker Crust:
  • 2 1/4 cups graham cracker crumbs (16 graham cracker sheets)
  • 9 tablespoons melted butter
  • 1/3 cup granulated sugar
  •
  • Cheesecake:
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup sour cream
  • 1 egg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  •
  • Cookie Dough Topping:
  • 11 tablespoons butter, softened
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups flour
  • 1 egg
  • 1/4 teaspoon salt
  • 1 1/4 cups chocolate chips

Instructions

1. Preheat oven to 325°F and line a 9×13-inch pan with foil, leaving overhang for easy removal. Spray with nonstick cooking spray.

2. Mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of the pan and bake for 8 minutes or until lightly golden.

3. Beat cream cheese and sugar until light and fluffy. Add egg and mix until combined, then mix in sour cream, lemon juice, and vanilla. Spread evenly over crust.

4. In a separate bowl, beat butter, sugars, and vanilla until creamy. Add egg and mix well.

5. Whisk together flour and salt, then gradually mix into the wet ingredients. Stir in chocolate chips.

6. Take handfuls of cookie dough, flatten slightly, and place over the cheesecake layer, leaving small gaps.

7. Bake for 50–60 minutes or until cookie dough is set and golden.

8. Cool completely in the pan before lifting out and cutting into bars.

9. Refrigerate until ready to serve, allowing bars to sit at room temperature briefly before serving.

Notes

Store in an airtight container in the refrigerator for best freshness.

Allow bars to sit at room temperature for about 15 minutes before serving for softer texture.

You can use store-bought cookie dough (about 36 ounces total) as a shortcut.

Customize the cookie dough by adding nuts, candies, or different flavored chips.

To freeze, cool completely, slice, and freeze individually before storing together for up to 3 months.
