2 tbsp unsalted butter
1 tbsp olive oil
1.5 lbs boneless, skinless chicken thighs, cut into bite-sized chunks
1 medium onion, finely diced
3 carrots, peeled and sliced into rounds
2 celery stalks, sliced thinly
3 cloves garlic, minced
1/3 cup all-purpose flour
6 cups low-sodium chicken broth
1 tsp dried thyme
2 bay leaves
1 cup frozen peas
1/2 cup heavy cream
2 cups all-purpose flour (for dumplings)
1 tbsp baking powder
1 tsp salt
1 cup whole milk
2 tbsp melted butter


Instructions

In a large pot or Dutch oven, heat butter and olive oil over medium-high heat.
Add the chicken chunks and brown on all sides, then remove and set aside.
Add onion, carrots, and celery to the pot and sauté until softened, about 5 minutes.
Stir in garlic and cook for 1 minute until fragrant.
Sprinkle flour over vegetables and stir for 1-2 minutes to cook out the raw flour taste.
Slowly whisk in the chicken broth, then add thyme and bay leaves.
Return chicken to the pot, bring to a boil, then reduce heat and simmer for 15 minutes.
In a bowl, mix flour, baking powder, and salt for the dumplings.
Stir in milk and melted butter to form a soft dough.
Drop spoonfuls of dumpling dough into the simmering stew.
Cover with a tight-fitting lid and steam for 15 minutes without peeking.
Stir in frozen peas and heavy cream, simmer for 2 minutes, and discard bay leaves before serving.


Notes

Ensure your pot has a tight-fitting lid to allow the dumplings to steam properly. Do not remove the lid during the 15-minute steaming time, as this will cause the dumplings to deflate. Store leftovers in an airtight container for up to 3 days; the flavors deepen significantly overnight.
