Ingredients
4 boneless skinless chicken breasts, pounded to even thickness
1/4 cup all-purpose flour
2 tablespoons olive oil
2 tablespoons butter
1 large yellow onion, thinly sliced
2 crisp apples, cored and thinly sliced
1 cup high-quality apple cider
1/2 cup chicken broth
1/2 cup heavy cream
1 tablespoon fresh thyme leaves
1 teaspoon apple cider vinegar
Salt and black pepper to taste
Instructions
Season the chicken breasts with salt and pepper, then dredge in flour, shaking off the excess.
Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Sear the chicken until golden brown and cooked through, about 5-6 minutes per side; remove and set aside.
In the same skillet, add the remaining butter, onions, and apples, sautéing until soft and caramelized.
Pour in the apple cider and chicken broth, scraping the bottom of the pan to deglaze, and simmer until reduced by half.
Stir in the heavy cream, thyme, and apple cider vinegar, simmering until the sauce thickens.
Return the chicken to the pan to coat with the sauce and heat through.
Serve immediately, spooning the creamy sauce and apples over the chicken.
Notes
Serve over creamy mashed potatoes, roasted root vegetables, or with crusty sourdough bread to soak up the sauce. Ensure chicken is at room temperature before searing for even cooking. Store leftovers in an airtight container for up to 3 days.
