Description

Ingredients

12 oz halal Italian turkey or beef sausage, casings removed
1 tablespoon olive oil
10 oz potato gnocchi
1 cup heavy cream
1/2 cup chicken broth
1 cup butternut squash puree
3 cloves garlic, minced
2 tablespoons fresh sage, chopped
2 tablespoons fresh thyme, chopped
Salt and coarsely ground black pepper to taste


Instructions

Heat olive oil in a large, high-sided skillet over medium heat.
Add the crumbled sausage and cook until browned and cooked through, then remove with a slotted spoon.
In the same skillet, add the minced garlic and sauté until fragrant.
Stir in the butternut squash puree, heavy cream, and chicken broth until combined and simmering.
Add the gnocchi to the sauce and cook for 3-5 minutes until soft and coated.
Stir the cooked sausage, fresh sage, and fresh thyme back into the skillet.
Season with salt and pepper to taste and serve immediately.


Notes

Ensure the sausage used is labeled halal to maintain integrity of the dish. You can roast and mash fresh butternut squash if store-bought puree is unavailable. For a richer flavor, consider toasted pine nuts as a garnish.
