Description

Indulge in the ultimate comfort of this velvety, creamy soup. Featuring savory halal chicken-based Italian sausage, tender ditalini pasta, and crisp carrots in a rich, parmesan-infused broth, this one-pot meal is as luxurious as it is simple. Perfect for busy weeknights, it delivers restaurant-quality flavors that feel like a warm hug in a bowl.

Ingredients

Scale

1 lb Halal chicken Italian sausage (casings removed)
1 tablespoon olive oil
1 medium onion, diced
3 garlic cloves, minced
3 medium carrots, diced
6 cups chicken broth
1 cup ditalini pasta
1 cup heavy cream
1 cup freshly grated parmesan cheese
2 cups fresh spinach or kale
Salt and pepper to taste

Instructions

Heat the olive oil in a large pot over medium-high heat.
Add the chicken sausage and brown thoroughly, breaking it apart with a wooden spoon.
Stir in the diced onion and carrots, cooking until softened.
Add the minced garlic and cook for one minute until fragrant.
Pour in the chicken broth and bring to a gentle boil.
Stir in the ditalini pasta and cook according to package directions until al dente.
Reduce heat to low and stir in the heavy cream and grated parmesan until melted and smooth.
Fold in the spinach or kale and cook until just wilted.
Season with salt and pepper before serving.

Notes

Use high-quality freshly grated parmesan for the best melt and flavor profile. Store leftovers in an airtight container for up to 3 days; note that the pasta will continue to absorb broth, so add a splash of extra chicken broth when reheating.
