Ingredients
2 tablespoons olive oil
1 small yellow onion, finely chopped
2 cloves garlic, minced
1 pinch red pepper flakes
1 (28-ounce) can crushed tomatoes
1/2 teaspoon kosher salt
1/2 cup heavy cream
1 pound penne or fusilli pasta
Fresh basil leaves for garnish
1/2 cup grated Parmesan cheese
Instructions
Bring a large pot of salted water to a boil and cook the pasta according to package directions.
While the water heats, heat the olive oil in a large skillet over medium heat.
Add the onion and cook until softened, about 5 minutes.
Add the minced garlic and red pepper flakes, cooking for another minute until fragrant.
Pour in the crushed tomatoes and season with salt, simmering for about 10-15 minutes.
Stir in the heavy cream and cook for another 2 minutes until the sauce is creamy and pink.
Drain the pasta and toss it directly into the sauce until well coated.
Top with grated Parmesan and fresh basil before serving.
Notes
Store leftovers in an airtight container for up to 3 days. Add a splash of water when reheating to loosen the sauce. For added protein, stir in cooked chickpeas or grilled chicken strips.
