A warm hug in a bowl, this Crock Pot Chicken Pot Pie is the ultimate comfort food. Tender chicken, hearty vegetables, and a rich, creamy sauce slow-cooked to perfection. This simplified recipe captures all the beloved flavor of classic chicken pot pie with minimal effort, making it a weeknight staple.

1.5 lbs boneless, skinless chicken breasts or thighs
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 (10.5 ounce) can condensed cream of chicken soup
1 cup milk
1 (10 ounce) package frozen mixed vegetables (peas, carrots, corn, green beans)
1/2 cup chopped yellow onion
1/4 cup chopped celery
1 (8 ounce) can refrigerated biscuit dough, cut into quarters


Instructions

Place chicken breasts or thighs in the bottom of your slow cooker. Season with salt, pepper, garlic powder, and onion powder.
In a bowl, whisk together the condensed cream of chicken soup and milk until smooth. Pour this mixture over the chicken.
Stir in the frozen mixed vegetables, chopped yellow onion, and chopped celery.
Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through and tender.
About 30 minutes before serving, remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and stir to combine with the sauce and vegetables.
Place the biscuit quarters on top of the chicken and vegetable mixture.
Cover and cook on high for another 20-30 minutes, or until the biscuits are cooked through and golden brown.


Notes

For a thicker sauce, you can mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir it into the slow cooker during the last hour of cooking.
You can substitute fresh vegetables for frozen, but ensure they are chopped small enough to cook through.
Serve immediately in bowls, ensuring each serving gets some chicken, vegetables, and a piece of biscuit.
