1 tablespoon olive oil
1 pound lean ground beef
1 medium yellow onion, diced
2 medium carrots, diced
2 stalks celery, diced
3 cloves garlic, minced
1 can (15 oz) red kidney beans, rinsed and drained
1 can (15 oz) cannellini beans, rinsed and drained
1 can (28 oz) crushed tomatoes
4 cups beef broth (halal certified)
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon black pepper
8 ounces ditalini pasta
Fresh parsley for garnish


Instructions

Heat the olive oil in a skillet over medium-high heat and brown the ground beef until cooked through; drain excess fat.
Transfer the cooked beef to the slow cooker.
Add the onion, carrots, celery, garlic, kidney beans, cannellini beans, crushed tomatoes, beef broth, oregano, basil, and black pepper to the slow cooker.
Stir well to combine all ingredients.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
About 20 minutes before serving, cook the ditalini pasta in a separate pot of boiling water according to package directions; drain.
Stir the cooked pasta into the soup just before serving.
Garnish with fresh parsley and serve hot.


Notes

Ensure the beef broth is halal-certified to maintain dietary compliance. If you prefer a thinner soup, add an extra cup of broth. Store leftovers in an airtight container in the refrigerator for up to 3 days; note that the pasta may absorb more liquid over time, so you may need to add a splash of water when reheating.
