1 pound boneless skinless chicken thighs, cut into small pieces
1 pound red potatoes, diced
1/2 cup carrots, diced
1 cup celery, diced
1 cup onion, chopped
2 tablespoons fresh parsley, minced
1 cup frozen peas
2 cans (10.5 ounce each) condensed cream of chicken soup
1 cup chicken broth
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can (16 ounce) refrigerated biscuit dough


Instructions

Place the chicken, potatoes, carrots, celery, and onion into the slow cooker.
In a medium bowl, whisk together the cream of chicken soup, chicken broth, thyme, basil, oregano, salt, pepper, and one tablespoon of parsley.
Pour the sauce mixture over the ingredients in the slow cooker and stir gently to combine.
Cover and cook on low for 6-7 hours or on high for 3-4 hours.
About 30 minutes before serving, stir in the frozen peas.
Place the biscuit dough pieces on top of the chicken mixture inside the slow cooker.
Cover and cook for an additional 30-45 minutes or until the biscuits are golden brown and fully cooked through.
Garnish with the remaining tablespoon of parsley before serving.


Notes

You can substitute chicken breasts for thighs if preferred, though thighs stay tenderer in a slow cooker. Make sure to use an alcohol-free chicken broth. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
