1 tbsp olive oil
1 small onion, diced

1 tsp Italian seasoning
0.5 tsp crushed red pepper flakes
6 cups chicken broth
8 lasagna noodles, broken into 2-inch pieces
1 cup heavy cream
1 cup ricotta cheese
1 cup shredded mozzarella cheese
0.5 cup grated parmesan cheese


Instructions

Place the chicken breasts, olive oil, onion, garlic, salt, pepper, Italian seasoning, and red pepper flakes into the slow cooker.
Pour the chicken broth over the ingredients.
Cover and cook on low for 6 hours or high for 3 hours until the chicken is cooked through.
Remove the chicken breasts and shred them using two forks, then return the meat to the slow cooker.
Add the broken lasagna noodles to the pot and stir, ensuring they are submerged in the broth.
Cover and cook on high for an additional 20-30 minutes, or until the noodles are tender.

Notes

If the soup becomes too thick after adding the cheese, stir in an additional 0.5 cup of warm chicken broth to reach your desired consistency.
