Description

This Mediterranean Lemon Chicken bursts with bright lemon and aromatic herbs, marinated to perfection. It’s a delightful dish that’s both tangy and tender, making it a hit for family dinners or gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled (optional)

Instructions

1. In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and black pepper. Mix well to create the marinade.

2. Place the chicken breasts in the bowl and make sure each piece is thoroughly coated with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for best flavor.

3. Preheat your oven to 375°F (190°C).

4. Place the marinated chicken breasts in a baking dish. Pour any remaining marinade over the chicken.

5. Bake for 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).

6. Remove from the oven and let the chicken rest for a few minutes.

7. Garnish with fresh parsley, kalamata olives, and optional feta cheese before serving.


Notes

Marinating the chicken overnight will enhance the flavors.

Substitute kalamata olives with green olives for a different twist.

Serve with Mediterranean couscous or a fresh Greek salad.

Pairs well with a light white wine like Sauvignon Blanc.
