Description
A warm, cheesy chicken avocado melt sandwich loaded with juicy chicken, creamy avocado, fresh vegetables, and toasted golden bread.
Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 ripe avocado, sliced
- 4 slices cheese (Swiss, cheddar, or provolone)
- 4 slices bread (sourdough, ciabatta, or preferred)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 ripe tomato, sliced
- Butter or olive oil for grilling
Instructions
1. Season chicken breasts with salt and pepper on both sides.
2. Heat olive oil in a skillet over medium-high heat and cook chicken for 6–8 minutes per side until fully cooked (165°F internal temperature).
3. Remove chicken, let rest for 5 minutes, then shred or dice into bite-sized pieces.
4. In a bowl, mix mayonnaise and Dijon mustard, then toss with the chicken until well coated.
5. Lay out bread slices and evenly spread the chicken mixture onto two slices.
6. Top with red onion, tomato slices, avocado, and cheese.
7. Place remaining bread slices on top to form sandwiches.
8. Heat butter or olive oil in a skillet over medium heat.
9. Grill sandwiches for 4–6 minutes per side until bread is golden brown and cheese is melted.
10. Remove from skillet, rest briefly, slice, and serve warm.
Notes
Letting the chicken rest keeps it juicy and flavorful.
Cover the skillet briefly if cheese needs help melting.
Use thicker bread for better structure when grilling.
Customize with bacon or different cheeses for variation.
Serve immediately for best texture and flavor.
