1–2 tablespoons olive oil
1 pound ground beef
1 large onion, diced
4 cloves garlic, minced
1 (15-ounce) can diced tomatoes (do not drain)
1 (15-ounce) can tomato sauce
1/3 cup tomato paste
4 cups chicken broth
1–2 cups water
1 tablespoon Italian seasoning
1 teaspoon salt
Freshly ground black pepper
8 ounces uncooked bowtie pasta
Ricotta cheese, for garnish
Mozzarella cheese, for garnish
Parmesan cheese, for garnish
Fresh parsley, for garnish


Instructions

Place a Dutch oven or large soup pot over medium-high heat and add the olive oil.
Add the ground beef and cook until browned, breaking it apart with a spoon.
Add the diced onion and sauté until softened, then stir in the minced garlic and cook for another minute until fragrant.
Stir in the tomato paste, tomato sauce, diced tomatoes with their juices, chicken broth, and water.
Add the Italian seasoning, salt, and black pepper, then bring the mixture to a boil.
Reduce the heat to a simmer and stir in the uncooked bowtie pasta.
Cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally.
Ladle the soup into bowls and top with a dollop of ricotta, shredded mozzarella, grated parmesan, and a sprinkle of fresh parsley.


Notes
