2 carrots, peeled and sliced
2 celery stalks, sliced
1/2 cup yellow onion, chopped
3 garlic cloves, minced
4 tablespoons avocado oil, divided
1 cup uncooked orzo
3 tablespoons all-purpose flour
1 pound chicken breast, diced
4 cups chicken broth
2 cups vegetable broth
1 tablespoon Better Than Bouillon Chicken Flavored Seasoning
1/2 teaspoon dried dill
1/4 cup fresh lemon juice
1 teaspoon lemon zest
Salt and black pepper to taste


Instructions

Heat 2 tablespoons of oil in a large pot over medium heat and sauté the carrots, celery, onion, and garlic until softened.
Add the diced chicken to the pot and cook until browned on all sides.
Whisk in the flour until it coats the vegetables and chicken, cooking for one minute to remove the raw flour taste.
Pour in the chicken and vegetable broths along with the Better Than Bouillon, stirring to combine and dissolve any bits on the bottom.
Bring the mixture to a boil, then stir in the orzo and reduce the heat to a simmer.
Cover and cook for about 10-12 minutes or until the orzo is tender.
Stir in the lemon juice, fresh lemon zest, and dried dill.
Season with salt and pepper to taste before serving hot.


Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The orzo will absorb liquid over time, so add a splash of broth when reheating. Use gluten-free flour for a gluten-sensitive version.
