Description

This luxurious soup transforms the viral Marry Me Chicken flavors into a cozy, creamy bowl. Featuring sun-dried tomatoes, tender orzo pasta, and succulent rotisserie chicken in a rich parmesan-cream broth, this meal is a one-pot wonder that delivers restaurant-quality taste in under 45 minutes. It is the perfect comforting dinner for busy weeknights, satisfying, flavor-packed, and easy to clean up.

Ingredients

Scale

1 tbsp olive oil
1 red onion, diced
2 tsp minced garlic
1 cup sun-dried tomatoes, finely diced
1 cup orzo
1 tbsp tomato paste
6 cups chicken stock
1 cup heavy whipping cream
8 ounces cream cheese, cubed at room temperature
3 tsp dried basil
1/2 tsp black pepper
Kosher salt, to taste
1 tsp dried Italian seasoning
1 bag fresh baby spinach (5–6 oz)
2 cups shredded rotisserie chicken
1/2 cup parmesan cheese, finely shredded
Freshly chopped basil (optional garnish)

Instructions

Heat olive oil in a large stockpot or Dutch oven over medium heat.
Add the diced red onion and sauté until translucent.
Stir in the minced garlic and tomato paste, cooking for 1 minute until fragrant.
Add the orzo and sun-dried tomatoes, tossing briefly to coat.
Pour in the chicken stock and bring the mixture to a gentle boil.
Reduce heat to low, cover, and simmer for 8-10 minutes until the orzo is tender.
Stir in the cubed cream cheese and heavy whipping cream until the base is smooth and velvety.
Add the shredded rotisserie chicken, dried basil, Italian seasoning, and black pepper.
Fold in the fresh baby spinach and cook just until wilted.
Remove from heat and stir in the parmesan cheese.
Season with salt to taste and garnish with fresh basil before serving.

Notes

You can substitute orzo with other small pasta shapes like ditalini or small shells if preferred. Ensure the cream cheese is at room temperature to prevent clumps. For a healthier version, you can swap heavy cream for half-and-half, though the texture will be slightly less luxurious.
