1.5 lbs chicken breasts, sliced into cutlets
2 tablespoons olive oil
1 ¾ cups chicken broth
¼ cup heavy cream
1 teaspoon Worcestershire sauce
1 teaspoon mustard powder
1 teaspoon honey
4 cloves garlic, minced
½ cup grated Parmesan cheese
1 tablespoon fresh lemon juice
Salt and black pepper to taste
Fresh parsley for garnish


Instructions

Season the chicken cutlets generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat and sear the chicken until golden brown and cooked through, then remove from the skillet.
Add the minced garlic to the same skillet and sauté until fragrant.
Pour in the chicken broth, Worcestershire sauce, mustard powder, and honey, scraping up the browned bits from the bottom of the pan.
Simmer the liquid until it reduces by about half, then stir in the heavy cream.
Reduce heat to low and whisk in the Parmesan cheese until the sauce is smooth and velvety.
Stir in the lemon juice and return the chicken to the skillet to coat thoroughly in the sauce.

Notes

Ensure you scrape the brown bits (fond) from the bottom of the pan as they contain the concentrated flavor of the chicken. You can serve this over pasta, mashed potatoes, or with roasted vegetables.
