Ingredients

1 tablespoon butter
1 tablespoon olive oil
1 medium onion, diced
3 ribs celery, sliced
3 large carrots, peeled and sliced
3 cloves garlic, minced
12 cups chicken stock
1 teaspoon dried thyme
1/4 teaspoon dried rosemary
1/4 teaspoon turmeric
1/8 teaspoon dried sage
2 bay leaves
1 teaspoon chicken bouillon paste
3 cups shredded rotisserie chicken
8 ounces egg noodles
Kosher salt, to taste
Fresh parsley for garnish (optional)


Instructions

In a large pot or Dutch oven, heat the butter and olive oil over medium heat.
Add the onion, celery, and carrots; sauté for 5-7 minutes until the vegetables begin to soften.
Add the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken stock and add the thyme, rosemary, turmeric, sage, bay leaves, and bouillon paste.
Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
Add the egg noodles to the pot and cook according to package directions, usually about 8-10 minutes.
Stir in the shredded rotisserie chicken and cook until heated through.
Remove the bay leaves, season with salt to taste, and serve warm with a sprinkle of fresh parsley.


Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. If the noodles absorb too much broth, add a splash of chicken stock when reheating. To keep noodles from getting mushy, you can cook them separately and add them to individual bowls when serving.
