Description
A simple and flavorful Greek chicken marinade made with olive oil, lemon, and herbs, perfect for grilling, baking, or pan-frying.
Ingredients
- 1/4 cup olive oil
- 1 tablespoon red wine vinegar
- Juice of 1 lemon
- 1 teaspoon honey
- 1 teaspoon garlic powder
- 2 teaspoons dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon paprika
- 1/4 teaspoon black pepper
- 1 pound boneless, skinless chicken breast
Instructions
1. Whisk together olive oil, red wine vinegar, lemon juice, honey, garlic powder, oregano, salt, paprika, and black pepper in a bowl.
2. Place chicken in a zip-top bag and pound to even thickness.
3. Pour marinade over chicken and seal the bag, removing excess air.
4. Massage marinade into chicken for about 30–60 seconds.
5. Refrigerate for at least 30 minutes or up to 2 days.
6. Remove chicken from fridge and let sit at room temperature for 20 minutes before cooking.
7. Discard marinade and cook chicken on grill, stovetop, or oven until internal temperature reaches 165°F.
8. Let chicken rest for 5 minutes before serving.
Notes
Marinating helps keep chicken juicy and flavorful.
Do not reuse marinade that has touched raw chicken.
You can freeze chicken in the marinade for up to 3 months.
Cooking times vary: grill 2–4 minutes per side, bake at 400°F for 18–20 minutes, or pan-cook 5–8 minutes per side.
