Description

A wholesome, nutrient-dense one-pan meal that perfectly balances the savory, lean protein of ground turkey with the earthy sweetness of tender potatoes. This skillet is crafted for busy weeknights, offering a vibrant, satisfying dinner that feels like a home-cooked comfort dish. With the addition of fresh, leafy greens and a touch of melted cheese, it is an effortless way to create a hearty, well-rounded meal in under thirty minutes, making it a reliable staple for any family dinner rotation.

Ingredients

Scale

1 lb ground turkey
2 medium sweet potatoes, peeled and cubed
1 medium yellow onion, diced
3 cloves garlic, minced
3 cups fresh kale or spinach
1/2 cup shredded cheddar or mozzarella cheese
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
Salt and black pepper to taste

Instructions

Place the cubed sweet potatoes in a microwave-safe bowl with a splash of water, cover, and microwave for 5-7 minutes until tender.
Heat olive oil in a large skillet over medium-high heat.
Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon.
Stir in the onion and garlic, cooking until the onion is translucent and fragrant.
Add the pre-cooked sweet potatoes to the skillet.
Season with oregano, smoked paprika, salt, and pepper, tossing to combine.
Add the greens and stir until wilted.
Top with cheese, cover the skillet for 1 minute to melt, and serve warm.

Notes

Microwaving the sweet potatoes ahead of time is the secret to cutting down the total cook time significantly. You can swap kale for baby spinach if you prefer a milder flavor. This dish stores well in an airtight container for up to 3 days, making it an excellent option for meal prep.
