Description
A refreshing Hawaiian Chicken Salad packed with juicy pineapple, tender chicken, and a creamy tangy dressing for the perfect tropical twist.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup pineapple chunks, drained
- 1/2 cup red bell pepper, diced
- 1/4 cup green onions, sliced
- 1/2 cup celery, diced
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Lettuce leaves for serving
Instructions
1. Shred the cooked chicken into bite-sized pieces and place it in a large mixing bowl.
2. Dice the red bell pepper, slice the green onions, and dice the celery into small pieces.
3. Add the chopped vegetables to the bowl with the shredded chicken and mix gently.
4. In a separate bowl, whisk together Greek yogurt, mayonnaise, honey, apple cider vinegar, and garlic powder until smooth.
5. Season the dressing with salt and pepper to taste.
6. Pour the dressing over the chicken and vegetable mixture.
7. Stir gently until everything is evenly coated with the dressing.
8. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
9. Serve chilled over crisp lettuce leaves.
Notes
Rotisserie chicken works great for convenience and added flavor.
Fresh pineapple provides the best flavor, but canned works well too.
Adjust sweetness by adding more or less honey to taste.
For extra crunch, consider adding chopped nuts like cashews or almonds.
This salad can be made ahead and stored in the refrigerator for up to 3 days.
