Description

Sweet, spicy, and tropical shrimp skewers with juicy pineapple and a flavorful honey glaze, perfect for grilling season.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper, diced
  • 1 red onion, diced
  • 1 Tbsp olive oil
  • Salt and black pepper to taste

  • Spicy Honey Glaze:
  • 1/4 cup honey
  • 2 Tbsp soy sauce
  • 1 Tbsp sriracha sauce
  • 1 Tbsp fresh lime juice
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated

Instructions

1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

2. Thread the shrimp, pineapple chunks, red bell pepper, and red onion onto the skewers.

3. In a small bowl, whisk together the honey, soy sauce, sriracha sauce, lime juice, minced garlic, and grated ginger until well combined.

4. Preheat your grill to medium-high heat.

5. Brush the skewers lightly with olive oil and season with salt and black pepper.

6. Place the skewers on the preheated grill and cook for about 2-3 minutes per side, until shrimp are pink and opaque and vegetables are slightly charred.

7. During the last minute of grilling, brush generously with the spicy honey glaze.

8. Remove skewers from the grill, brush with remaining glaze, and serve immediately.
