Ingredients
- 6 cups chopped lettuce
- 1 (8 oz) Greek marinated chicken breast
- 1/4 cup Kalamata olives (pitted)
- 1/4 cup crumbled feta cheese
- 2 cups sliced tomatoes
- 1 cup sliced cucumber
- 1/2 tsp black pepper
- 1 tsp sugar
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1/2 tsp kosher salt
- 2 tsp dried oregano
- 1 garlic clove, minced
Instructions
1. Add chopped lettuce to a large serving bowl or divide into two bowls.
2. Arrange sliced chicken, tomatoes, cucumber, olives, and feta cheese over the lettuce.
3. In a small jar, combine olive oil, red wine vinegar, minced garlic, oregano, sugar, salt, and pepper.
4. Secure the lid and shake well until the dressing is emulsified.
5. Taste and adjust seasoning if needed.
