1 tablespoon olive oil
1 pound ground turkey or chicken sausage (casing removed)
1 large yellow onion, finely diced
3 medium carrots, finely diced
2 medium celery ribs, finely diced
4 cloves garlic, minced
5 cups low sodium chicken broth
14.5 ounces canned cannellini beans, rinsed and drained
14.5 ounces canned red kidney beans, rinsed and drained
14.5 ounces diced tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon black pepper
1.5 cups small pasta (like ditalini or shells)
Fresh parsley for garnish


Instructions

Heat olive oil in a large pot over medium-high heat.
Add the ground turkey or chicken sausage and cook, breaking it up with a spoon, until browned.
Add the onion, carrots, and celery to the pot and sauté for 5-7 minutes until softened.
Stir in the minced garlic, oregano, basil, and pepper, cooking for another minute until fragrant.
Pour in the chicken broth, diced tomatoes, cannellini beans, and kidney beans.
Bring the soup to a boil, then reduce heat and simmer for 15 minutes.
Add the pasta and continue to simmer for 8-10 minutes, or until the pasta is al dente.
Remove from heat, garnish with fresh parsley, and serve hot.


Notes

Leftovers store beautifully in an airtight container for up to 3 days in the refrigerator; the pasta may soak up broth, so add a splash of water when reheating. You can also use vegetable broth to keep it lighter or add fresh spinach during the last 2 minutes of cooking for extra greens.
