Ingredients
1 tbsp canola oil
2 large carrots, chopped
2 ribs celery, chopped
0.5 medium onion, diced
4 cloves garlic, minced
8 cups chicken broth (halal)
2 cups cooked chicken breast, shredded
1 cup orzo pasta
2 tsp salt
1 tsp dried parsley
0.5 tsp dried thyme
0.5 tsp dried basil
0.25 cup fresh lemon juice
Black pepper to taste
Instructions
Heat the canola oil in a large pot over medium heat.
Add the carrots, celery, and onion, sautéing until softened, about 5-7 minutes.
Stir in the minced garlic, dried parsley, dried thyme, and dried basil, cooking for 1 minute until fragrant.
Pour in the chicken broth and bring to a simmer.
Add the orzo pasta and cook for 8-10 minutes, or until tender.
Stir in the shredded chicken and heat through for 2-3 minutes.
Remove from heat and stir in the fresh lemon juice.
Season with salt and pepper to taste before serving.
Notes
For best results, add the cooked orzo just before serving if you intend to store the soup to prevent the pasta from soaking up too much broth. You can substitute chicken breasts with rotisserie chicken to save even more time. Ensure the chicken broth is certified halal or homemade without alcohol.
